  • 1/2 head of cauliflower 
  • 1/2 head of broccoli
  • 1 1/2 green pepper
  • 1 cup grape tomatoes
  • 1/4 cup Italian dressing (I use Olive Garden's)
  • 1 T Italian seasoning
  • 1 t garlic salt
  • 1 Cup of uncooked pasta
  • Parmesan cheese for garnish
* Any vegetables of your choice

Directions
  • Cook the pasta according to package instructions
  • Cut the vegetables into bite size pieces. Add the seasonings, toss with 1/2 the dressing, cover and marinate for at least an hour.
  • Add the pasta, the remaining dressing and toss to mix
  • Garnish with Parmesan cheese and serve

This salad will keep in the refrigerator for several days. If desired, add additional dressing.
